Fried Taro
Ingredients
500 grams taro; peeled
1 tsp. pepper
1 cup coconut cream
2 tsp. salt
1 cup rice flour
1 cup wheat flour
1 tbsp. sugar
vegetable oil for frying
Preparation
Slice the taro into long, thin
sticks.
Mix the wheat flour, rice flour, and
coconut cream
together, stirring to blend. Then,
add salt, sugar, and
pepper and stir to mix. Add the taro
spears to the batter
and stir in order to coat them well.
Heat the oil in a wok. When it is
hot, scoop about a
tablespoonful of the batter into the
oil, one at a time,
forming regular size of batter balls.
Deep fry until golden
brown and remove to drain. Serve with
sweet and sour
sauce.
Sweet and sour sauce, mix 1/2 cup
sugar, I/2 cup vinegar,
and 1 tsp. salt in a pot on low heat.
Simmer until
thickened, add the peanut and chilli,
stir well, transfer
to a bowl.
